Asparagus Crostini

Ingredients

  • 1 bunch Asparagus
  • 1 loaf French Bread
  • Balsamic Vinegar
  • Olive Oil
  • Salt & Pepper
  • Parmesan Cheese

Instructions

  • Preheat oven to 350F.
  • Snap the woody ends off the asparagus and cut into 2 inch pieces.
  • Slice the bread and brush with olive oil.
  • Lightly coat the wrapped asparagus with olive oil, salt and pepper.
  • Spread the asparagus on a baking sheet.
  • Spread the bread onto a separate baking sheet.
  • Roast the asparagus in the oven for 10 minutes.
  • Broil the bread until brown.
  • To plate, top a bread slice with 3-5 asparagus spears and drizzle with balsamic vinegar and shaved parmesan.
