Ingredients

  • ½ pound Boneless Chicken Thighs
  • 1 jar Pepperoncini Peppers
  • 1 pound Bacon
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  • Stem and seed the peppers.
  • Cut the chicken into small cubes, small enough to fit inside a pepper.
  • Mix salt and pepper into the chicken.
  • Stuff the pepper with chicken.
  • Cut the bacon strips in half and wrap the pepper with bacon.
  • Bake on a cooling rack over a baking sheet at 350F for approximately 20 minutes or until the bacon is the desired doneness and the chicken has reached 165F internal temperature.
