Ingredients
- Beets (fresh or precooked, not canned)
- Mixed Greens
- Microgreens
- Pomegranate Seeds
- Pistachios
- Goat Cheese
- Grapefruit, segmented
- Red Onion
- EVOO
- Balsamic Vinegar
- Fresh Black Pepper
Instructions
- Either in a large salad bowl or per salad plate, place a layer of mixed greens on the bottom.
- Chop the beets and add them to the greens.
- Add pomegranate seeds, pistachios, and goat cheese.
- Dress with EVOO, balsamic vinegar, and fresh black pepper.
